Recipe - Apple or Pear or Peach Crisp


Jona Gold apples - 5-6 (for a 10 in. pie dish) - Cut length-wise with the skin.
Mix with sugar (unbleached cane sugar) and ground cinnamon so all the apples are lightly covered with it. Put into a greased 10 in. pie dish.
In another bowl mix whole wheat flour and all-purpose flour with rolled oats. Mix with hard butter (cut butter into this mixture) - enough butter so that the resulting mixture looks roughly like bread crumbs. This mixture should be laid over the apples so that it covers the apples.
Bake in a 350 oven for about 35 minutes or until golden brown.
Serve warm with ice cream or whipped cream.

Recipe - Apple Cake/Bread/Muffins.


It is tea time and I want a healthy snack for my family. The kids want something that is not very crispy, not very mushy, not too sweet. I want it to be healthy and nourishing. I involve the kids to make something that they will enjoy. Our favorite is Apple Cake during winters. I use the following recipe for cakes, breads and muffins. This particular recipe is eggless so it suits vegetarians well.


For desired results use standard measuring cups and spoons.

  • All purpose flour (part whole wheat is fine) - 3 cups
  • Baking soda - 2 teaspoons
  • Salt - 1/2 teaspoon
  • Cinnamon - 2 teaspoons
  • Ground ginger - 1 teaspoon
  • Organic soy flour - 2 heaping tablespoons
  • Organic oil - 3/4 cup
  • Organic vanilla - 2 teaspoons
  • Organic sugar - 1 and 1/4 cups
  • Tart apples - 3 1/2 cups
  • Walnuts (chopped) - 1 cup (optional)


Preheat oven to 350. Prepare three 8 inch round baking pans or one 9 by 13 inch baking pan or a muffin mold and bread baking mold/dish.


Stir in all the below ingredients into a mixing bowl for a flour mixture.

  • All purpose flour (part whole wheat is fine) - 3 cups
  • Baking soda - 2 teaspoons
  • Salt - 1/2 teaspoon
  • Cinnamon - 2 teaspoons
  • Ground ginger - 1 teaspoon
  • Organic soy flour - 2 heaping tablespoons

On the side melt 1/2 cup organic butter in medium sized pan and add:

  • Organic oil - 3/4 cup
  • Organic vanilla - 2 teaspoons
  • Organic sugar - 1 and 1/4 cups

Coarsely grate tart organic apples and add chopped walnuts/almonds (optional)

Add flour mixture and stir until combined. Grease the pan with butter or oil. Pour into the pan(s).


Bake for 30-50 minutes (depending on pan size). For muffins, it takes 30 -40minutes to bake. To see if the cake is done, gently pierce with a tooth pick into the cake after 30 -40 minutes. The tooth pick should come clean without any wet cake batter.

Recipe - Hyderabadi Style Mirchi Bajji(Mirchi Pakora)

Stuffed chillies fritter


The name of mirchi bajji brings the memories of Hyderabad and the "chat bandars". Mirchi bajji's (mirchi ke pakore) are not only very famous among the Andhra crowd but also famous all over India. Specially during winter, this makes a very good snack to go with tea/coffee.

We live in the Midwest and it is hard to find the indian green chillies to make mirchi bajji's. I generally use "Anaheim peppers". I could not find the fresh looking anaheim peppers in the store Yesterday. So I went ahead and bought the hot yellow pepper/hungarian wax pepper, which are medium hot. Hot yellow pepper is closely related to mild banana pepper.

Mirchi bajji is my husband's favorite snack. I made these, yesterday for valentines day. I took photos at every step, while making mirchi bajji's. He was so impressed and suggested that I should start blogging, as I enjoy cooking. I should say, he is the inspiration for my blogging. And have put it in action the very next day....

Ingredients for the filling:

  • Besan (bengal gram flour) - 3 tablespoons (optional)
  • Sesame seeds - 3 tablespoons
  • Coriander powder - 1 tablespoon
  • Ajwain (carom seeds or vaamu)- 3 teaspoons
  • Amchoor (dry mango powder) - 2 tablespoon OR
  • Tamarind pulp (small lemon size tamarind) - 2 tablespoons
  • Salt - 1/2 teaspoon

Grind them all in a blender/mix them well - make a paste adding very little water(if you are using Dry mangao powder).

Chillies/Mirchi stuffing preparation:

Wash and dry 10 green chillies (Anaheim peppers). Make a vertical slit in the middle of chilli, stuff the chillies with the filling you prepared above and set them aside. Tip: Remove the white stalk in the middle and the seeds, if you are using the Indian green chillies.

Batter preparation to dip stuffed chillies:

  • Besan (gram flour) - 1 and 1/2 cups
  • Rice flour - 2 tablespoons (optional) gives crispness to the mirchi bajji.
  • Ajwain (carom seeds or vaamu) - ½ tsp each
  • Red chilly power - 1 teaspoon.
  • Salt according to taste - approximately - 3/4 teaspoon.
  • Water 1 cup approximately.

Mix them in a wide bowl so that when you dip the chillies they are easy to dip. Prepare medium thick batter consistency slowly adding water to it(do not add water all at once).


Take 3 cups of oil in a skillet for frying the fritters/mirchi bajji's. Heat the oil at medium-high temperature. Dip the chilli one at a time in the batter so that all the sides of the chilly are well coated with the batter and gently drop the chilli in the skillet and deep fry until golden.

Remove them on to a paper towel covered plate to soak the excess oil and let it cool a minute or two. Slit the prepared bajji's and stuff them with chopped onions.

Serve with some lime juice sprinkled and finely sliced onions,chaat masala and salt to taste.

For Tamarind pulp:

Take 5 small stalks of tamarind add less than 1/4 of water and microwave it for 2- 3 minutes. the water will decrease to half of the original quantity. Let it cool and then mash the tamarind pulp with a spoon and filter it.

Recipe - Berry Cobbler


  • Butter or margarine, softened- 1/4 cup
  • Sugar 1/2 cup
  • All-purpose or whole-wheat pastry flour - 1 cup
  • Baking powder - 2 tsp
  • Milk - 1/2 cup
  • Fresh OR frozen blackberries, blueberries, strawberries or a mixture - 2 cups
  • Raspberry OR Apple juice - 3/4 cup
  • Ice cream or whipped cream (optional)


In a mixing bowl, mix cream butter and sugar. Combine flour and baking powder; add to creamed mixture alternately with milk. Stir until just moistened. Pour into a greased 1-1/2 qt. baking pan. Sprinkle with berries. Pour raspberry or apple juice over all. Bake at 350 for 45-50 minutes or until golden brown. Serve warm; top with ice cream or whipping cream if desired.

Paneer Tikka

(Marinated cottage cheese on skewers)


  • 2/16/08 - I have added a blog entry on how to make fresh yogurt (dahi)


  • Paneer - little less than half a gallon of milk used for preparing paneer tikka.

Paneer preparation: Boil one gallon milk in a pot (3.78litres). Stir regularly so that the milk won't burn. After the milk comes to a full boil, add half a cup of distilled vinegar or 4 tablespoons of lemon juice. Stir continuously and the milk will start curdling. After a few minutes filter the curds into a cheese cloth and drain all the water. Put some weight on the filtered paneer (cheese) so that the paneer is hard and can be cut into slices after an hour or two.

  • Thick yogurt - 1 cup (tied in cloth for 2 hours)

Preparation for marinating sauce:

  • Ginger - 1 inch (grated)
  • Garlic - 1 (crushed)
  • Red Chilli Powder - 1 and a half tsp (according to taste)
  • Tandoori Masala - 1 tsp
  • Chaat Masala - 1and a half tsp
  • Sugar - 1 tsp
  • Cumin Seeds - 1 tsp (crushed)
  • Capsicum, Onion, Tomato, Carrot juliennes - 1 tbsp each (long thin strips)
  • Coriander - 1 tbsp (finely chopped)
  • Butter/Oil - 1 tbsp


Cut paneer into 1/2 inch horizontal slabs.

Mix the red chilli, salt, sugar, cumin, tandoori masala, the ginger-garlic and chopped coriander in the curd. Mix well.

Brush the slabs of paneer liberally on both sides and edges with the sauce prepared above.

Marinate for a couple of hours (30 minutes if you are in a hurry to taste this yummy snack) so that the paneer absorbs the marinating sauce well. Place in refrigerator till required. Before serving, heat a non-stick pan.

Add butter/oil and place slices to sizzle till light brown.

Flip and repeat for other side.

Cut into bite size square and arrange in serving dish.
Add a tsp oil/butter to pan, heat.

Add sauted vegetables, chaat masala and salt to taste.

Pour over the tikka paneer.

Serve hot with tooth picks or small forks and sauce of your choice.

Preparation time: Paneer tikka preparation 30 minutes (best if paneer is prepared the same day) excluding yogurt tied in a cloth for 2 hours, Marination - 30 minutes

Serves: 4
