Recipe - Egg less Cranberry orange cookies

Vegan cookies – (Egg less cranberry orange cookies)

Summary:

Cranberry orange cookies are very easy to make. My kids love these cookies. I try to make it healthy replacing all purpose flour with wheat flour. In fact this recipe was tried by my seven year old daughter under my supervision. The photos of cookies you see may not be perfect in shape as they were made by my daughter. But tastes the same, I should say very tasty/sweet as she made them with love :-)


I give these cookies as part of my daughter's lunch as dessert.

Ingredients

  • Sugar – 1 and 1/2 cup
  • Butter – 1/2 cup
  • Milk - ¼ cup (replace with one ripe mashed banana – vegans)
  • Orange juice - 2 tablespoon
  • All purpose flour - 3 cups (partial wheat flour can be used)
  • Baking powder - 1teaspoon
  • Salt – ½ teaspoon
  • Baking soda 1/4 teaspoon
  • Soy flour – 2 tablespoons
  • Cranberries – 1 and 1/2 cups (chopped)
  • Nuts – 1 cup (chopped)

Preheat:

Preheat the oven at 350°.

Process

Melt butter in a mixing bowl. Stir in all the above ingredients. Mix all the ingredients well without any lumps.


Give the cookie dough desired shape (remove the cookie molds before placing the tray in the oven). To avoid dough sticking to your palm, apply butter.

Place them on a cookie sheet and bake them for 10 -12 minutes or until golden brown around the edges.

Decorate it with grated orange peel.

Preparation time: 20 – 25 minutes

Servings – 25 – 30 cookies depending on the size.
