Recipe - Shelgum ki sabzi (Turnips curry)



Turnips cooked with simple spices

Summary:

Turnips are good source of vitamins C, B6 and high in dietary fiber.

Turnips curry is cooked in the same way as potato. Turnips curry is an acquired taste. Shelgum ki sabzi tastes very good with roti and specially with Makki/Corn ki roti.

Shelgum ki sabzi recipe is from aunt Swadesh. Sabzi can also be made in a regular skillet or pan. Cooking in a pressure cooker saves time, energy and nutrients. I prefer to add red chilli powder over green chillis because my kids can't handle too much spice. The recipe given below is cooked in a pressure cooker. In the recipe description, you will notice there is no mention of green chillies. Add green chillies with tomatoes and other spices, if you prefer to add green chillies.


Ingredients:

  • Turnips - 4 medium sized (3 - 4 cups chopped)
  • Onion - 1 small (1 cup chopped)
  • Tomato - 1 big ( 1 and half cups chopped)
  • Turmeric - 1/4 teaspoon
  • Coriander powder (dhania powder) - 1/2 teaspoon
  • Red chilli powder - 1 teaspoon
  • Salt - 3/4 teaspoon (according to taste)
  • Cilantro - 2 table spoons
  • Cumin seeds - 1 teaspoon
  • Asafoetida (hing) - 1/4 teaspoon
  • Oil - 2 teaspoons
  • Water - 2 cups


Process:

Preheat oil in pressure cooker, add cumin seeds. Let the seeds splutter and add hing. Add onions, fry them for 2 minutes (don't have to fry them till they are light brown). Add tomatoes, and all the spices (coriander powder, turmeric, red chilli powder and salt). Mix masala well, saute for 2 - 3 minutes till tomatoes are cooked.

Add turnips and cilantro, mix well. Saute for 1 - 2 minutes.

Add 2 cups of water. Mix them well. Cook till 2 whistles.

Serve hot with roti/paratha.
