Recipe - Potato masala (potato curry/dosa curry)

Crepe stuffing made with potato


Potato curry for dosa can be made in many different ways. Without the potato masala, the masala dosa experience is not complete. The recipe also serves as basic formula for any kind of curry. It is a very simple recipe without many spices.


  • Potato - 4 medium size boiled ( 3 cups approximately)
  • Onion - 1 cup (chopped)
  • Green chilies - 1 serrano (1 - 2 Indian green chilies)
  • Cilantro - 1 tablespoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - 1 teaspoon

For seasoning:

  • Chana dal - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard - 1/2 teaspoon
  • Hing - 1/4 teaspoon
  • Curry leaves - 1 stalk
  • Oil - 1 tablespoon


Cut the boiled potatoes, chop onion, green chilies and cilantro.

Preheat the wok with oil and add seasoning. Let the seeds splutter, add green chilies, hing, curry leaves and onion. Sautee for 3 minutes.

Add potato, salt, turmeric powder and mix well.

Cook potatoes till you can smell the aroma (5 -10 minutes). Serve hot with dosa.
