Recipe - Chinese Noodles (Vegetable Noodles with Tofu)


Summary:

The best part about the Chinese Noodles is, it has everything in it - Protein from tofu, vegetables and carbohydrates. Kids love to eat noodles and very easy to make. I got this recipe from my friend, who is a very good cook, who doesn't cook very often. Tofu is my addition to this recipe. I don't use ajinomoto (MSG) in the noodles as it is not good for kids. I use low sodium soy sauce.

Ingredients:


Noodles - 3 cups (cooked)

Vegetables - You can add as many vegetables as you would like.
Tofu - 1/2 a pound
Carrot - 1 cup (shredded)
Cabbage - 1 cup
Capsicum - 1 cup
Baby corn - 1 cup
Zuccini - 1 cup
Broccoli - 1 cup
Green beans - 1 cup
Grated ginger - 1 tablespoon
Garlic minced - 2 - teaspoons
Black pepper - 1/2 teaspoon
Tomato ketchup - 1 and a half tablespoon (can add more if you like more of the sweet and sour taste)
Soy sauce - 1 and 1/2 tablespoons
Salt - 1 teaspoon (according to taste)
Grean onions - 2 tablespoons
Ajinomotto - 1/2 teaspoon (optional)

Noodles:


Boil water in a medium sauce pan and add one teaspoon oil and salt to it. Add thin pasta or chinese noodles no 4 to the boiling water and cook it for 5-8 minutes (Break noodles/pasta into 3 - 4 inches long). Immediately drain the pasta/noodles in a colander and set it aside.

Vegetable Cutting:

Thinly slice/chop the vegetables and tofu in length wise so that they blend in with the noodles.

Preparation:




Preheat the wok (kadai) with 2 teaspoons of oil and add carrots and green beans, stir fry for two minutes (if you use cut carrots instead of shredded).

Add chopped garlic and ginger with the rest of the vegetables and tofu other than green onion. Stirfry it for 5 minutes. Do not over cook the vegetables (it will loose its nutrients and won't taste good with noodles).


Add the salt and black pepper.

Add the cooked noodles and 1/2 teaspoon Ajinomoto (MSG)(this is optional), it gives zing to the noodles. After 3-5 minutes, add soy sauce and regular tomato ketchup.




Then mix noodles well. You can always add more soy sauce or ketchup later to adjust the taste. Season with green onion and Serve hot

Tips:

You can prepare everything before hand and keep them ready and mix all of the ingredients together at the meal time. And serve noodles hot.

Thanks again for this recipe. I add white vinegar to it and it turns out just as great. A quick complete meal in itself.
