Recipe - Chinese fried rice

Rice cooked and sautéed with green beans and carrots

Summary:

Chinese fried rice is popular all over the world. Indians also enjoyed their own version of Chinese fried rice with their own signature spices. My husband loves fried rice - Indian (Biriyani) or Chinese cooked at home ;-) The only difference between Indian Biriyani and Chinese fried rice are the spices. When we were in California, his colleagues enjoyed this dish frequently. One of his colleagues like the fried rice at our place that he used to constantly ask his wife to make it in the same fashion. I shared my techniques with her and now they are presented here for your benefit :-)


Ingredients:

Rice - 1 cup (not over cooked)
Carrots - 1/2 cup (finely chopped)
Green beans - 1/2 cup (finely chopped)
Bell Pepper - 1/4 cup (finely chopped)
Spring onions - 1/4 cup
Soy sauce - 1 and 1/2 tablespoon
Ajinomoto (Monosodium glutamate/ MSG) - 1/4 teaspoon
Oil - 1 tablespoon
Salt - 1/2 teaspoon
Black pepper power - 1/2 teaspoon

Rice preparation :

Cook rice with salt (one teaspoon or less) and water (2 cups or less). Quantity of water needs to adjust based on the age and type of rice being used.

Process:


Preheat the wok with oil at medium high temperature. Add chopped carrots, green beans and fry them for 4 -5 minutes.

Add bell pepper and sauté for 2 more minutes.


Add cooked rice to the vegetables. Simmer the cooking temperature. Add soy sauce, salt, black pepper powder, ajinomoto (msg) and mix it well.



Garnish with chopped spring onions and serve hot with any gravy vegetable.




Preparation time: 15 - 20 minutes (apart from rice cooking)
Servings: 2 -4
